Recipe of the Week: Spicy Chilli, Mint and Lemon Salad by Aimie Smith

This delicious fresh, quick and easy-to-prepare salad is perfect for the summer!

 

Salad Ingredients

1 Carrot (grated)

1/2 Cucumber (sliced)

1/4 Cabbage (shredded)

1/2 Mango (sliced)

1 Courgette (grated)

1 Avocado (sliced)

2 Radishes (sliced)

 

Dressing Ingredients

Juice and zest of 1 lemon

Olive Oil

Fresh mint (chopped)

Fresh coriander

1/2 chilli

 

Method

1. Combine all the salad ingredients in a large bowl.

2. Blend all the dressing ingredients with a food processor or hand blender and mix with the salad.

3. Serve with prawns, smoked salmon or feta cheese, or as a side salad.
